When stylist and content creator Mandi Nelson told us that her cookbook club chose the Lyke Minded Cookbook by Ali Primrose as their featured cookbook for the month, we were excited to collaborate on setting the scene for a festive get together for friends with some shop favorites and lots of amazing food plucked right from the pages of the book.

Mama’s PLT Pasta

  • Rigatoni pasta
  • Pancetta
  • Leeks
  • Basil
  • Cream cheese
  • Tomato paste
  • Onion powder
  • Garlic
  • Tomatoes
  • Arugula
  • Lemon
  • Parmasan
  • Salt + pepper 

instructions

Cook 1 lb pancetta. Set aside. Dice 6 leeks and place in the pan with 4 cloves minced garlic until limp. Spread carton of cherry tomatoes on baking sheet with olive oil, salt + pepper. Broil on high for 15 mins. Cook pasta al dente. Save 1/2 cup pasta water. Add 1 can tomato paste & 1 carton cream cheese to leeks. Combine until smooth. Stir in pancetta and pasta. Place mix in baking dish. Add pasta water, mix. Top with broiled tomatoes. Bake at 450 for 10 mins. Sprinkle parm at 5 mins until melted. Mix arugula, basil, lemon and olive oil together and put on top of baked pasta.
